White Chocolate Spiced Cake
From Katherine Sabbath

  • 200g butter, cubed
  • 200g white chocolate, chopped
  • 200g (1 cup, firmly packed) dark brown sugar
  • 180ml (3/4 cup) hot water
  • 1 tablespoon maple syrup
  • 2 teaspoons vanilla extract
  • 2 eggs, at room temperature
  • 150g (1 cup) self-raising flour
  • 150g (1 cup) almond meal
  • 1 teaspoon cinnamon
  • 1 teaspoon ground nutmeg


Cake Soak

  • 1 cup milk
  • 2 teaspoons vanilla extract 


Rosewater Cream Cheese Filling

  • 1 (8 ounce) package cream cheese
  • 225 g (1 cup) white sugar
  • 1 1/2 cups heavy whipping cream
  • 1 1/2 teaspoon rosewater*
  • 1 drop red food colouring (optional)


*Rosewater concentration may vary depending on the brand. I would highly recommend to taste as you go, to make sure you have the perfect balance of rosewater in your cream cheese filling!
