Spicy Vegan Carrot Soup Recipe

INGREDIENTS
1 Red Onion
3 Cloves Garlic
1 Tbsp Coconut Oil
2 tsp Red Curry Paste
12 Large Carrots (chopped)
1 14oz (400g) Can Coconut Milk
3 cups (720ml) Vegetable Stock
⅓ loving cup (83g) Peanut Butter
Salt together with Pepper to taste
Crushed peanuts together with chopped cilantro for serving (optional)

METHOD
  1. Peel together with chop the onion together with shell the garlic together with add together to a pot amongst the kokosnoot crude oil together with saute until the onions are softened. Then add together the reddish curry glue together with saute together.
  2. Add inwards the vegetable stock/broth, kokosnoot milk together with chopped carrots. Bring to the boil together with and then plough downward the heat, encompass together with simmer until the carrots are soft together with cooked (about 25-30 minutes).
  3. Add the peanut butter together with stir it inwards until good mixed. Then take away the soup from the oestrus together with using an immersion blender blend until smooth. If you lot don't accept an immersion blender, together with then add together the soup to your blender jug inwards stages together with blend until smooth.
  4. Add common salt together with pepper to taste.
  5. Serve amongst crushed peanuts together with chopped cilantro.
