Creamy Spinach Artichoke Soup


2 tbsp butter
1 pocket-size onion, diced small
3 garlic cloves, minced
1/4 tsp crushed carmine pepper flakes, optional
1/4 loving cup flour
6 cups vegetable broth
1 (12-oz.) packet Barilla Collezione Three Cheese Tortellini
1 (14-oz.) tin quartered artichoke hearts, good drained together with roughly chopped
2 cups lightly packed spinach, chopped
1/2 loving cup heavy cream
shredded Parmesan cheese

  1. Melt butter inwards a large pot over medium heat.
  2. Add onion to pot. Season alongside common salt together with pepper, thence saute until softened together with lightly browned, virtually 10 minutes.
  3. Stir inwards garlic together with carmine pepper flakes; produce until fragrant, virtually thirty seconds.
  4. Mix flour into pot, thence produce for ii minutes, stirring constantly.
  5. Slowly whisk inwards vegetable broth. Bring to a boil.
  6. Add tortellini to pot; cook, stirring occasionally, until almost al dente (about seven to eight minutes).
  7. Stir inwards artichokes together with spinach.
  8. When spinach is wilted, add together heavy cream. Mix well. (Do non boil.)
  9. Remove soup from heat, thence flavour alongside common salt together with pepper to taste.
  10. Serve soup hot, sprinkled alongside Parmesan Cheese. Enjoy!
